Free-range chicken skewers from the Airfryer

Marinating, breading, air frying for delicious chicken skewers!

Ingredients

For the chicken skewers:

 

  • 2 free-range chicken breast fillets from Nature & Respect
  • 100 ml olive oil
  • 150 ml white wine
  • 1 lemon
  • 2 cloves of garlic, peeled and chopped
  • 1 tbsp dried chili flakes
  • fresh oregano
  • Salt & pepper

For the breading:

 

  • 150 g Parmesan cheese
  • 230 g breadcrumbs
  • 230 g panko flour
  • 2 tbsp BBQ rub

Preparation

  1. In a bowl, mix together the olive oil, white wine, lemon juice, garlic, chili flakes, oregano, salt and pepper.
  2. Cut the chicken into small pieces, add to the marinade and mix well. Cover and marinate in the fridge for approx. 1 hour.
  3. In a bowl, mix together the remaining spices, breadcrumbs, panko flour, Parmesan and BBQ rub. Remove the chicken from the marinade, coat in the breadcrumbs and press down firmly. Thread onto skewers.
  4. Preheat the deep fryer to 200° C. Cook the chicken for approx. 12 minutes until golden brown and crispy.
  5. Meanwhile, melt the butter with the remaining garlic. Stir in the lemon juice and parsley. Drizzle over the chicken before serving.
