Pumpkin gnocchi with duck breast – comfort food for fall.

Ingredients

For the duck breast

 

  • 400 g free-range duck breast fillet from Nature & Respect
  • olive oil
  • Spices as desired

For the sauce

 

  • 1 Hokkaido pumpkin
  • 2 onions
  • 3 cloves of garlic
  • 300 ml cooking cream
  • olive oil

For the gnocchi

 

  • 400 g gnocchi

Set

 

  • Fresh chives

Preparation

  1. Prepare the sauce: 
    Wash and deseed the pumpkin and cut into wedges. Place the pumpkin, quartered onions, and garlic on a baking tray, drizzle with olive oil, season, and bake in the oven at 220 degrees Celsius. After approx. 35 minutes, place the vegetables in a blender and add the cooking cream. 
  2. Prepare the duck: 
    Sear the free-range duck breast fillet and slice. 
  3. Cook the gnocchi:
    Cook the gnocchi according to the package instructions.
  4. Serve: 
    Arrange the duck breast on a bed of sauce and add the gnocchi. 
  5. Garnish with fresh chives and serve.
