The perfect Easter meal - Creamy Chicken Tuscan

Celebrate Easter with our Creamy Chicken Tuscan! Tender chicken in a creamy sauce with spinach & tomatoes - a festive treat for the whole family!

Ingredients

  • 4 free-range chicken thighs from Nature & Respect
  • 2 cloves of garlic (chopped)
  • 1 onion (diced)
  • ½ untreated lemon (zest & juice)
  • 150 g cherry vine tomatoes (sliced)
  • 15 g basil (in strips)
  • 150 g baby spinach
  • 3 tbsp olive oil
  • 1 tsp coarse salt
  • 1 pinch of pepper
  • 2 tsp oregano
  • 200 ml chicken stock
  • 200 g double cream
  • 50 g Parmesan (grated)

Preparation

Preparation:

  1. Finely chop the garlic and onion. Rinse the lemon in hot water, pat dry, grate the zest and squeeze out the juice. Wash the tomatoes and score them crosswise. Cut the basil into strips and wash the spinach.
  2. Pat the free-range chicken thighs dry. Heat 2 tbsp olive oil in a deep pan and fry the drumsticks until golden brown all over. Season with salt, pepper and oregano. Remove, drizzle with a little lemon juice and set aside.
  3. Add 1 tbsp olive oil to the hot pan. Sauté the onions, garlic and tomatoes for 2-3 minutes. Add the spinach and sauté briefly. Deglaze with chicken stock and simmer for 5 minutes.
  4. Return the chicken thighs to the pan, add the double cream and simmer over a medium heat for 20 minutes until the meat is butter-tender. Finish with parmesan and basil.
