Free-range chicken breast fillet zucchini skewer

Perfect for summer barbecues or as a light meal, the skewer brings variety and sophistication to the plate.

Ingredients

  • 2 Nature & Respect Free-range chicken breast fillets - turmeric & onion, diced
  • 1 large zucchini, cut into strips
  • 2 EL Olive oil
  • 1 TL Paprika powder
  • 2 Garlic cloves, chopped
  • 1 lemon for decoration
  • Salt and pepper to taste

Preparation

  1. In a bowl, mix the olive oil, paprika powder, garlic, lemon juice, salt and pepper to make a marinade. 
  2. Add the zucchini strips to the marinade, mix well and leave to marinate for at least 30 minutes. Then remove and roll up individually. 
  3. Thread the chicken cubes and zucchini rolls alternately onto the skewers. 
  4. Grill the skewers on the barbecue over a medium heat for approx. 10 - 12 minutes, turning regularly until the chicken is cooked through. 
  5. Serve with a slice of fresh lemon and enjoy
