Free Range Grilled Chicken Wings - Texas Style!

Howdy Ya'll! Texas callin'! Three different marinades - from mild to fiery - make these chicken wings a BBQ hit for all wings lovers!

Ingredients

  • 3 packages free range chicken wings

For the "Sweet Chilli" marinade

 

  • 4 tbsp maple syrup
  • 1 tbsp chili flakes

For the "Caribbean Style" marinade

 

  • 1 lime, juice of which
  • 1 tsp nutmeg
  • 1 chili
  • 1 bunch of chives
  • 5 cm ginger
  • 2 cloves of garlic
  • 70 ml soy sauce
  • 1 tbsp cumin
  • 1 tsp cinnamon

For the "Buffalo Hot" marinade

 

  • 50 ml Habanero Salsa
  • 30 ml oil

For the ranch dressing

 

  • 80 ml buttermilk
  • 3 tbsp cottage cheese
  • 1 clove of garlic
  • 1 tsp Dijon mustard
  • 125 ml sunflower oil
  • 1 tbsp white wine vinegar
  • salt & pepper
  • 3/4 tbsp sugar
  • 1 shallot
  • 1 bunch of mixed herbs (parsley, chives, basil)

For the side dish: carrot and celery sticks

 

  • 4 carrots
  • 4 celery

Preparation

  1. Wash chicken wings and pat dry.
  2. Mix 6 chicken wings well with ingredients for "Sweet Chilli".
  3. Add all ingredients for "Carribean Style" to bowl and mix to a paste. Add chicken wings, mix well.
  4. Allow last 6 chicken wings to marinate with ingredients for "Buffalo Hot".
  5. Set all 3 bowls of marinated chicken wings aside and let sit for about 1 hour.
  6. For ranch dressing, whisk together all ingredients.
  7. Place chicken wings on hot grill and grill for about 25 min all around.
  8. Serve with spring onion, chives and chili.
