Glazed Free Range Chicken Drumsticks Asia Style

Big and delicious in Japan! Asian marinated and crispy grilled. These drumsticks with Asian slaw are the star of any barbecue buffet.


  • 2 Pkg. free-range chicken Drumsticks
  • 1 stick lemongrass
  • 2 chilli peppers
  • 2 garlic cloves
  • 1 tbsp ginger, freshly grated
  • 2 tbsp honey
  • 100 ml soy sauce
  • 2 tbsp hoi sin paste
  • Salt
  • 1/4 tsp cinnamon

For the Asia-Style Cabbage Salad


  • 300 g white cabbage
  • 3 spring onions
  • 1 tbsp ginger, freshly grated
  • 2 tbsp. soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp oil/sesame oil
  • 1/2 bunch coriander
  • 1 handful of roasted almonds, alternatively peanuts
  • Pepper


  1. For the marinade, cut washed lemongrass, chilies, peeled garlic and onions. Grate the ginger.
  2. Place all ingredients in a large bowl and mix well.
  3. Wash the chicken and pat dry with paper towels.
  4. Place the washed and dried free range chicken drumsticks in the marinade, mix properly and set aside for 30 minutes.
  5. Grill the marinated free range chicken drumsticks over low heat for 20 minutes, coating the chicken occasionally with the marinade. Then turn, close the grill lid and cook for another 10 min.
  6. For the Asia-style slaw, remove the outer leaves of the white cabbage. Cut the cabbage into very fine strips. Cut cleaned scallions into fine rings. Whisk together soy sauce, vinegar, oil and grated ginger for the dressing. Mix the white cabbage and spring onions with the dressing, season with pepper and let it sit for about 20-30 minutes.
  7. Serve the grilled free range chicken drumsticks with mint. Serve Asia-style slaw with roasted almonds and chopped coriander.
