Marinated chicken skewers with radish and cucumber salad & mustard dip

Juicy chicken skewers, spicy marinated, meet fresh radish and cucumber salad & creamy mustard dip - a summery, light flavour experience!

Ingredients

For the chicken skewers

 

  • 1 pack of Nature & Respect marinated free-range chicken skewers

For the salad

 

  • 1/2 cucumber
  • 6–8 radishes
  • 1 spring onion
  • 1 tbsp olive oil
  • 1 tsp white wine vinegar or lemon juice
  • Salt & pepper to taste

For the dip

 

  • 2 tbsp coarse mustard
  • 2 tbsp honey
  • 2 tbsp yoghurt (optional for creaminess)

Additionally

 

  • Fresh cress or pea shoots for garnish

Preparation

  1. Prepare the chicken skewers:
Grill or fry the Nature & Respect Marinated Free Range Chicken Skewers on the barbecue or in a hot pan with a little oil over a medium heat for approx. 10-12 minutes, turning regularly, until golden brown and cooked through.
  2. Prepare the salad:
Cut the cucumber and radishes into thin slices. Finely slice the spring onion. Place everything in a bowl and mix with olive oil, vinegar, salt & pepper.
  3. Mix the dip:
Mix the mustard, honey and yoghurt in a small bowl. Season with salt & pepper to taste.
  4. Serve:
Arrange the chicken skewers on a plate with the salad and dip. Garnish with fresh cress or pea shoots.
