The PERFECT summer salad: Free-range chicken & rocket salad

The rocket salad with chicken strips, tomatoes & sweet mustard is a deliciously balanced meal that is quick to prepare and will delight!

Ingredients

  • 250 g free-range chicken breast fillet, cut into strips
  • 200 g rocket salad
  • 200 g cherry tomatoes, halved
  • 2 tbsp sweet mustard
  • 2 tbsp balsamic vinegar
  • Salt and pepper
  • Toasted pine nuts or walnuts for extra crunch

Preparation

  1. Heat a frying pan over a medium heat, add the olive oil and fry the seasoned chicken strips for 6-8 minutes until golden brown and cooked through.
  2. Place the rocket and cherry tomatoes in a large salad bowl.
  3. Whisk together the sweet mustard, balsamic vinegar and a pinch of salt to make the dressing. 
  4. Pour the cooled chicken strips together with the dressing over the rocket and tomatoes in the salad bowl and mix well.
  5. Sprinkle with toasted pine nuts or walnuts and serve immediately.
